Email alerts at specific times

I'd like to know how I can set up a multiple value timed email alert within Advanced alert manager? I suppose I can do this with multiple alert actions, but would rather not go down that route...

I can see how I can format a rule which would stripe across various days, unfortunately, the schedule I need to setup for involves one day where the rule is required ALL day (& I think I have rule blindness atm)

So, I'd like to be able to trigger emails alerts on the following schedule...

Mon - 6pm - 8am

Tues - 6pm - 8am

Weds - 6pm - 8am

Thurs - 6pm - 8am

Fri - 6pm - 8am

Sat - 6pm - 8am

Sun - All day (through 8am Mon)

What I can see at the moment is that I can set up the below, but with no exception available to make Sunday an ALL day rule?

Also, perhaps a stupid Q: but would the Mon - 6pm - 8am rule cover up until Mon 8am ?? (told you, rule blindness)
